Recipes for Goat Meat
So you want to try goat meat, but you don't know how to prepare it, right? Well, we are going to show you how to prepare this, one dish at a time and with each cut we have available.
Jamaican Goat Curry


Is Jamaican Curry Goat Healthy? Yes, goat meat is a very lean meat almost like bison meat. Then with the addition of onions, tomatoes, and Curry spices. This dish is everything you need to make a healthy meal.
First, you will need a bone-in goat cut like the leg roast or shoulder roast. You can either chunk it or throw it in the pressure cooker or slow cooker to release all the meat from the bone. I add a little acv to cook it in to tenderize the meat. Once the meat is tender and you can get it off the bone, you can cut it into pieces and put it back in the pot. Add chopped onions, chopped tomatoes, 1 garlic clove, 1 Tbsp. ginger, a few scotch bonnet peppers or any other peppers you like, and 3 Tbs. Curry powder. Simmer down for 20-30 minutes. Serve and enjoy!
Traditional Mexican Birria


Birria is a traditional Mexican stew made from slow-cooked, tender goat and flavorful red Chile broth. It's traditionally cooked for special occasions, but has become so popular that it can be made all the time for no particular occasion. Served with fresh cilantro and fresh lime juice, the Birria tacos are perfect!
So first we will need some peppers. 5 ancho peppers, 5 quajillo peppers, 2-3 chilis de arbol (optional if you want spicy)! Then we need 1 large white onion chopped, 3 large tomatoes, 5 cloves garlic, 1 Tbs. dried Mexican oregano, 1 Tbs. sea salt, 1 Tsp. cinnamon, 1 tsp. cumin, ground cumin, pepper, ginger, 1/2 cup apple cider vinegar, 2 large roasted tomatoes, 4 cups beef stock, and 3.5-4.5 pound goat roast.
First you want to heat a large pan on medium heat and add the dried peppers. Dry toast them in the hot pan 1-2minutes per side. Remove from heat and the toasted peppers to a large bowl. Cover with hot water and steep for 20 minutes. While the peppers are rehydrating, heat the olive oil in the same pan to medium heat and add the onions and chopped tomatoes and cook until soft about 5 minutes. Then add the garlic and cook one more minute. Then add this mixture to a food processor. Remove the softened peppers and add to the food processor also, but keep the liquid from the peppers. Add the seasoning and vinegar and 1 cup broth to the food processor. Process until smooth and thick. Cut the goat into chunks and put into a bowl. Pour the sauce over the meat and rub it good on the pieces. Cover and marinate the meat in the frig for at least 2 hours or overnight. When ready to cook, add the marinated meat and the sauce and chopped roasted tomatoes and the rest of the beef broth. Cover and cook on medium for about 3 hours or until the meat is tender and pulls apart. Add more broth if you need to make it soupier. Serve in bowls or as tacos.
Goat Chops

Loin or Rib Chops are one of our favorite cuts to make on the smoker. The ingredients are as follows: 2 lbs. goat chops, 1/4 cup fresh minced herbs, 5 minced garlic cloves, sea salt, black pepper, and 1 Tbsp. olive oil.
Instructions:
Allow chops to reach room temperature. Mix oil, herbs, garlic, salt, and pepper to create the rub. Coat the chops evenly with the rub. Choose your cooking method. To pan-fry, cook the chops in a hot pan 3-5 minutes on each side, and then let them rest for 2-3 minutes. To broil, turn the broiler up to high and cook the chops for 10 minutes, flipping about halfway through. Rest for 2-3 minutes. To grill, get the grill as hot as possible, grill for 4-6 minutes on each side. Rest for 2-3 minutes. Pair with your favorite sides and enjoy!
For the minced herbs, you have countless options here. Choose whatever suits your fancy! Some good choices include rosemary, thyme, or parsley. You can also use some stronger herbs if you like.
For a classic taste of the Mediterranean, consider marinating your chops for 24 hours before you cook them. You can do this in a mixture of olive oil, garlic, and fragrant herbs (like rosemary and thyme).



Goat Shanks are the lower part of the leg, located below the knee joint and above the foot. It is considered the "drumstick" and best cooked using, slow moist methods like braising or crockpot because it's a well-used muscle with lots of connective tissue.
Recipe is as follows: 4 PCs. of Goat Shanks, salt & pepper, 5 basil leaves, 1/3 C. olive oil, 2 whole lemons, 4 cloves of garlic, 2 onions sliced, 5-6 medium tomatoes or a 15 oz. can of tomatoes, 2 cups red wine vinegar or 2 cups red wine and 1 Tbsp. vinegar (we like the red wine vinegar because it really breaks down the meat and adds flavor, and 1 cup brown sugar.
Preheat the oven to 350 degrees. Layer onion in bottom of a casserole dish and then place the shanks on top of the onions. Mix your red wine vinegar and olive oil and pour that over the shanks. Sprinkle the brown sugar over this and then place a garlic clove and a lemon wedge between each shank. Pour the canned tomatoes or chopped tomatoes on top of all the ingredients and season to taste with salt and pepper and other seasonings if you like and finally place the basil on top. Cover and cook for 3 hours. Serve immediately with you favorite side.
Braised Goat Shanks
Easy Goat Enchiladas
Who doesn't like enchiladas? Try enchiladas with goat meat and you will love them even more. You can use any cut of goat meat for this, but we use the leg or shoulder roast and put it in the pressure cooker or crock pot to simmer and get all the seasonings blended into the meat and you will love your enchiladas!
Ingredients: 1 onion, chopped, 4-5 pounds of goat, garlic clove, poblano, jalapeno, or other Mexican peppers, 3-4 chopped tomatoes, and salt & pepper.
Throw all in the crock pot and cook for about 4 hours or until your meat is tender. Warm up your favorite tortillas, add your meat mixture, sprinkle some cheese on that and roll and place in a casserole dish. Sprinkle some cheese on top and bake at 400 degrees until the cheese is melted. Enjoy!
